Foss Fine Meats in Sparta issues recall

Foss Fine Meats in Sparta is issuing a voluntary recall of ham products produced for individuals and packaged and sold from its retail store, according to the Wisconsin Department of Agriculture, Trade and Consumer Protection. 

Affected products may include a Wisconsin mark of inspection with establishment No. 58 and may include a “packed-on” date of 1 to 153 or 330 to 356. 

The recall affects the following: smoked and cured whole hams, smoked and cured ham steaks, smoked and cured ham roasts, and smoked and cured ham hocks. 

It is a USDA class-one recall, which is the following: “This is a health hazard situation where there is reasonable probability that the use of the product will cause serious, adverse health consequences or death.”

According to owner Mark Wells, the recall stemmed from missing records. Federal requirements stipulate that a ham must be cooled to a certain temperature within a certain amount of time, which the staff did do, he said. But Foss Fine Meats did not keep the records that it should have to prove to inspectors that the ham was cooled in a timely manner.
